These are THE BOMB!

Chocolate is amazing, has numerous health benefits, and heck, I’m fairly sure it has supernatural qualities…at least at certain times of the month, amaright!!!????!!?

But seriously, if you’re going to indulge, why would you indulge in something OTHER than chocolate.

During the challenge and as my palette has changed, I have started making these cookies without the added honey for sweetness, but don’t bother if you’re not being super strict or just making these for a crowd.  They’re a wonderful treat in the afternoon with some hot tea and perfect for a baby shower or get together if you want to be able to enjoy what everyone else is enjoying without filling yourself with a bunch of processed sugar and flours…

I’ve literally memorized this recipe since I use it so often, and am about to invest in a gigantic amount of almond flour to use to make oodles of them for everyone I know, so I wanted to share it here.

 

ALMOND FLOUR CHOCOLATE CHIP COOKIES

What you need:

2 cups of almond meal/flour (used blanched for prettier cookies)

*Local friends – I’m about to make a bulk order, let me know NOW if you want in on it, $7.50/lb.

1 Tablespoon coconut flour

1/4 teaspoon salt

1/2 teaspoon baking soda

1/4 cup melted butter or coconut oil

1/4 cup of honey

2 eggs

1//2 cup (or more if you’re feeling CRAZY!) chocolate chips

What you do:

Mix the dry ingredients together, melt the butter (TIP – use the container from the butter/oil to measure out the honey – it will pour out easily and not stick to the sides of your measuring cup!), add the honey and eggs, stir together, then stir in the chocolate chips at the end.  Measure out a heaping tablespoon for each cookie, flatten them a little, and bake at 350 for 10-12 minutes until the edges are lightly golden brown.

Remember, this is nut flour you’re working with and anyone who has ever tried to toast nuts and accidentally went a LIIIIIIITLE too long on the heat knows they are super easy to burn and not even kind of good after you’ve let them go too l long.  So, that said, keep an eye on the timer! (See the pic below – I definitely let about half of that batch go just a tad too long and they were definitely not as good as the lighter colored ones, though, I still scarfed them down like there was no tomorrow…what can I say, chocolate.)
